Frozen Giant Tiger Prawns
Large tiger prawns, shell on and head on, frozen soon after landing. The dark bands across the shell are the mark of the species, and the meat beneath stays firm, sweet and full of juice.
What Arrives
- Whole prawns, head and shell on
- Large even size with firm, plump flesh
- Sold as a 2 kg pack, frozen
- Shell left on to hold moisture while cooking
How to Cook It
Grill shell-on over high heat with sea salt until the shells turn red, or sear quickly in a hot pan. They hold their sweetness in a creamy curry, and take well to garlic butter in the oven. Peel and devein before cooking if the recipe calls for it. Prawns turn tough fast, so pull them off the heat as soon as the flesh is opaque.
Storage
Keep at −18 °C or colder. Thaw slowly in the refrigerator, then cook the same day. Do not refreeze once thawed.
