Plate of spotted babylon snails with lemon wedges and dipping sauce

Frozen Spotted Babylon Snails

Sold out

Spotted babylon snails, gathered from clean coastal ground and flash-frozen soon after harvest. The shells are patterned brown and white, and the meat inside is plump, springy and sweet.

What Arrives

  • Whole snails in the shell, cleaned and ready to cook
  • Distinctive brown-and-white spotted shells
  • Firm, bouncy meat with a clean ocean finish
  • Sold as a 2 kg pack, frozen

How to Cook It

Boil briefly in salted water until the meat loosens, then serve with a garlic and chilli dip. The same snails work as a cold dish: boil first, then steep in a dressing of chilli, garlic, spring onion and vinegar for a few hours. For a hot plate, stir-fry with ginger, garlic and chilli over high heat. Overcooking turns the meat rubbery, so keep it quick.

Storage

Keep at −18 °C or colder. Thaw in the refrigerator, rinse the shells well, and cook within a day. Do not refreeze after thawing.
